Persian Herb Stew |
This recipe is absolutely delicious, and my boyfriends favourite. He has me make this for him at least once a month. And with all the herbs it is supper healthy too.

Ingredients
a can of red Kidney beans
1 beef broth cube
a bunch of parsley
a bunch of cilantro
a big bag or two bunch of spinach
a bunch of basil
cup of fresh mint
a bunch of fresh dill
a bunch of green onion
cubed beef or lamb
1 tsp of turmeric
1/4 tsp of fenugreek powder
4 cloves of garlic
1 onion
4 dried lemons (if do not have just use lemon juice)
salt and pepper to taste
2 tbs of olive oile
lemon juice to taste
Method
- take a large pot, heat on oven and add a tbs of olive oil
- add cut up onion, satay till onion is soft, then add beef or lamb chunks
- add garlic and cook meat till brown on each side
- add turmeric, fenugreek, salt and pepper and stir
- then add 4 cups of water with the 2 beef broth cubes
- let cook for 2 hours on medium/low
- Cut up parsley, cilantro, spinach, basil, mint, green onion, dill (all the herbs) and add to a pot with olive oil
- cook and stir till you smell the herbs and the spinach has shrunk
- after the meat has cooked for 2 hours add cooked herbs to pot
- then poke holes in the dried lemons and add ( Or add lemon juice to taste)
- sprinkle with salt and pepper
- Taste the stew it should have a strong lemon taste to it, if needed add lemon and salt
- let cook on low heat for 2 to 2 1/2 hours or until meat is very tender, keep on tasting you might need to add more salt or water.
- If the stew starts to loose all it water you can add more water.
