Lemon Chicken Recipe

Lemon Chicken Recipe
Lemon Chicken Recipe
This recipe is one of my favourites, it is easy and everyone loves it.

What You Will Need

1 cup of Chicken Broth
full chicken
potatoes ( add how much you want depends on how many people are eating)
1 big onion or 2 small onions
4 cloves of garlic
fresh herbs ( i like to use thyme, rosemary, and oregano)
3 lemons
a bunch of green onion.
2 tbs of olive oil

  • Preheat over too 350F 
  • Take the chicken and rinse it off good.  
  • Then in a large bowl add add garlic,  olive oil, fresh herbs,salt and pepper to taste and  squeeze lemon juice from the lemons into bowl and add the lemon skins too 
  • Then take the chicken and mix it all together in the bowl, make sure you rub the lemon, herbs and garlic in good with the chicken. 
  • Then cut up onion and add it too a roasting pan, laid out flat. 
  • Then peel potatoes and cut them in half and add them flat to the roasting pan 
  • Then stuff the chicken with herbs, and lemon peels in the back of the chicken and front
  • add Chicken to roasting pan
  • Pour the lemon juice and olive oil on top of the chicken
  • then cut up green onion, only use the white part, and add on top of chicken 
  • sprinkle some salt and pepper on top and put chicken in the oven 
  • let it roast for about a hour or longer until the top of the chicken is tanned and crisp and the inside is not pink
  • When chicken is done and the potatoes are are ready to eat, remove from over and roasting plate.
  • leave onion in roasting plate and add chicken broth, mix together while the onion is still in roasting pan. 
  • Pour sauce into a gravy dish, and you can use the sauce for a gravy sauce for your chicken and potatoes
