Israel Salad
This is a healthy easy salad to make, and one of my favourites, it goes really well with a  schnitzel. The trick is to cut all the vegetables really really small, the smaller the better.

There are tons of health benefits with the main ingredients.

 Tomatoes have tons of health benefits some include eye sight, good gut health, low hypertension, diabetes, skin problems and urinary tract infections. Tomato is a rich source of antioxidants that have been proven to be effective against many forms of cancer.

 Onion include substantial relief from number of diseases such as common cold, asthma, bacterial infections, respiratory problems, angina, and cough. Onions are also known to repel blood thirsty insects.

Cucumber is rich in vitamins A, C, and folic acid while the hard skin of cucumber is rich in fiber and a range of minerals include magnesium, molybdenum, silica, and potassium. In addition, cucumber has silica, a trace mineral contributing greatly at strengthening our connective tissues. Cucumber is known to heal many skin problems, under eye swellings and sunburn. Cucumber also contains ascorbic and caffeic acids which prevent water loss, therefore cucumber is applied topically on burns and dermatitis.

Ingredients
2 Tomatoes
1 onion
1 pepper (what ever colour you like)
1 Cucumber
1 lemon
tbs of olive oil
fresh mint
fresh parsley
salt and pepper to taste

Directions are very simple, all you need to do it cute up the vegetables very small and add into a bowl, then add lemon and oil. Add a few pieces of mint and a little bit of parsley and salt and pepper to taste... then enjoy :-)
