Persian Herb Stew Recipe ( Ghormeh Sabzi)

Persian Herb Stew 

This recipe is absolutely delicious, and my boyfriends favourite. He has me make this for him at least once a month. And with all the herbs it is supper healthy too.

Spinach include good eyesight, blood pressure, strengthens muscles, prevention of age-related macula degeneration (AMD), cataract, atherosclerosis and heart attack, neurological benefits, bone mineralization, anti-ulcerative, anti-cancerous property, skin protection, foetus development, protein rich for infant’s proper growth etc

Ingredients
a can of red Kidney beans
1 beef broth cube
a bunch of  parsley
a bunch of cilantro
a big bag or two bunch of spinach
a bunch of basil
 cup of fresh mint
a bunch of fresh dill
a bunch of green onion
cubed beef or lamb
1 tsp of turmeric
1/4 tsp of fenugreek powder
4 cloves of garlic
1 onion
4 dried lemons (if do not have just use lemon juice)
salt and pepper to taste
2 tbs of olive oile
lemon juice to taste

Method

  • take a large pot, heat on oven and add a tbs of olive oil
  • add cut up onion, satay till onion is soft, then add beef or lamb chunks
  • add garlic and cook meat till brown on each side  
  • add turmeric, fenugreek, salt and pepper and stir
  • then add 4 cups of water with the 2 beef broth cubes 
  • let cook for 2 hours on medium/low


  • Cut up parsley, cilantro, spinach, basil, mint, green onion, dill  (all the herbs) and add to a pot with  olive oil
  • cook and stir till you smell the herbs and the spinach has shrunk
  • after the meat has cooked for 2 hours add cooked herbs to pot
  • then poke holes in the dried lemons and add ( Or add lemon juice to taste) 
  • sprinkle with salt and pepper  
  • Taste the stew it should have a strong lemon taste to it, if needed add lemon and salt
  • let cook on low heat for 2 to 2 1/2 hours or until meat is very tender, keep on tasting you might need to add more salt or water. 
  • If the stew starts to loose all it water you can add more water. 







BBQ Chicken Kabob's

Ingredients 
6 Tbs of olive oil
6 Tbs of  lemon juice
3 cloves of garlic
salt and pepper to taste
2lb of boneless skinless chicken breast cut up into cubes
1 Tbs of melted butter
1 tsp of turmeric
1/4 tsp of cumin
1/4 tsp of coriander
two tomatoes cut up into 4 pieces
2 onion cut up into 4 pieces
1 pepper cut up into big cubes

Method
Put olive oil, lemon juice, garlic, salt, pepper, butter, and spices in a bowl then add chicken pieces and cover and let marinate over night.

Then put the Kabob together how ever you like Then  BBQ and enjoy :-)
  


Lemon Chicken Recipe

Lemon Chicken Recipe
This recipe is one of my favourites, it is easy and everyone loves it.

What You Will Need

1 cup of Chicken Broth
full chicken
potatoes ( add how much you want depends on how many people are eating)
1 big onion or 2 small onions
4 cloves of garlic
fresh herbs ( i like to use thyme, rosemary, and oregano)
3 lemons
a bunch of green onion.
2 tbs of olive oil

  • Preheat over too 350F 
  • Take the chicken and rinse it off good.  
  • Then in a large bowl add add garlic,  olive oil, fresh herbs,salt and pepper to taste and  squeeze lemon juice from the lemons into bowl and add the lemon skins too 
  • Then take the chicken and mix it all together in the bowl, make sure you rub the lemon, herbs and garlic in good with the chicken. 
  • Then cut up onion and add it too a roasting pan, laid out flat. 
  • Then peel potatoes and cut them in half and add them flat to the roasting pan 
  • Then stuff the chicken with herbs, and lemon peels in the back of the chicken and front
  • add Chicken to roasting pan
  • Pour the lemon juice and olive oil on top of the chicken
  • then cut up green onion, only use the white part, and add on top of chicken 
  • sprinkle some salt and pepper on top and put chicken in the oven 
  • let it roast for about a hour or longer until the top of the chicken is tanned and crisp and the inside is not pink
  • When chicken is done and the potatoes are are ready to eat, remove from over and roasting plate.
  • leave onion in roasting plate and add chicken broth, mix together while the onion is still in roasting pan. 
  • Pour sauce into a gravy dish, and you can use the sauce for a gravy sauce for your chicken and potatoes

This is a healthy easy salad to make, and one of my favourites, it goes really well with a  schnitzel. The trick is to cut all the vegetables really really small, the smaller the better.

There are tons of health benefits with the main ingredients.

Ingredients
2 Tomatoes
1 onion
1 pepper (what ever colour you like)
1 Cucumber
1 lemon
tbs of olive oil
fresh mint
fresh parsley
salt and pepper to taste

Directions are very simple, all you need to do it cute up the vegetables very small and add into a bowl, then add lemon and oil. Add a few pieces of mint and a little bit of parsley and salt and pepper to taste... then enjoy :-)

Butter Chicken Recipe

Butter Chicken Recipe

I love Butter Chicken, I have tried to make it a few times and it never turned out right, but this time it turned out really good :-)





Marinate sauce
1 cup yogurt
salt to taste
2 tablespoons chopped garlic
1/2 tablespoon garam masala
2 tablespoons melted butter
1 tablespoon chili powder
2 tablespoons chopped ginger
2 tablespoons lemon juice
2 tablespoons olive oil

Sauce
½ of cup of cream
2 cups of plain yogurt
1 cup of tomatoe paste
 2 tbs of ground almonds
1 red pepper chopped
3coped up garlics
1 tbs of garam masala
1 tablespoon chili powder
I tsp of coriander
1 tsp of cardamom
1 tsp of cumin  
1 tsp of brown sugar

Put all marinated ingredients into a bowl, and add cut up chicken pieces, and let marinate for at least 4 hours or overnight.

Preheat oven to 400 degrees F (200 degrees C).
Drain the marinated chicken with a strainer, then put the chicken pieces on skewers,  and bake in a preheated oven for 20 minutes, or until almost cooked through.
To Make the Sauce, Melt butter in a medium sauce pan, then add garam masala, coriander, cardamom, cumin, chili powder, saute till you spell the spices, but make sure you don’t burn it, just saute for about a minute not even, and then add garlic, ground almonds, and chopped red pepper. Saute till they are tender, and then add cream, plain yogurt, and tomato paste. Stir till blended and has that orange colure then add brown sugar,  worm up till the sauce starts to bubble a little bit then add chicken pieces.   Cook for about 5 minutes till chicken is not pink in the middle any more and constantly stir while cooking.  
Then serve on a plate of white rice.

French Onion Soup Recipe

French Onion Soup Recipe

Ingredients 
1/4 cup butter
2 tablespoons olive oil
4 cups onions, sliced
2 beef broth cubes 

4 cups of water
1/2 cup red wine
1 teaspoon dried thyme
salt and pepper to taste
2 tbsp brown sugar
 croutons
sliced provolone cheese
grated  Swiss cheese, diced
1/4 cup grated Parmesan cheese



Melt butter with olive oil in a large pot over medium heat. Add onions and stir continually until translucent. Add beef cubes and water, wine and thyme. Simmer for 30 minutes. Add sugar and season with salt and pepper. 

pour soup mix into a bowl that would be ok to put into the oven and place a handful of croutons in each bowl of soup. Sprinkle parmesan and swiss cheese and layer 2 slices of provolone on top. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns.

Chillian Corn Pie Recipe

I am in Santiago Chile right now, so I thought I would try a famous Chillian recipe. 
I use to think Corn had no health benefits but after looking it up I found out that there is lots! 

Corn is a source of Calories, Prevention of Haemorrhoids and Colorectal Cancer, Rich Source of Vitamins
Provides Necessary Minerals, Antioxidant, Cardio-Protective Attributes, Prevents Anaemia, Lowering LDL Cholesterol, Protection against Diabetes and Hypertension, and has Cosmetic Benefits

Ingredients:
  • 2 lbs corn kernels (fresh, frozen or Canned)
  • 1/2 oven-roasted chicken, deboned
  • 3 T butter
  • 1 T Olive oil
  • 2 T brown sugar
  • 1 C milk
  • 2 hard-boiled eggs, quartered
  • 1/4 C raisins (we used golden raisins)
  • 1/4 C black olives (traditionally kep whole, seed and all)
  • handful of basil leaves, minced
  • salt to taste


For the beef filling:
  • 1 lb ground beef
  • 1 large onion, diced
  • 2 T butter
  • 1/2 tsp cumin
  • 1 1/2 tsp paprika
  • Salt and pepper to taste

Directions:
Preheat the oven to 400ºF.
Take the corn kernels and pulse in a processor until finely chopped.  Heat the processed corn, chopped basil, salt and butter in a large pot.  Add the milk little by little, stirring constantly until the mixture thickens.  Cook over low heat for 5 minutes.  Leave to one side while you prepare the meat filling.
In a large skillet, sauté the onions in canola oil until transparent and fragrant.  Add the ground meat and sauté until brown.  Season with salt, pepper and ground cumin.
To prepare the pie, use an oven-proof dish that you can take to the table.  Butter the bottom of the dish and then spread the beef filling in an even layer at the bottom.  Scatter the hard boiled egg pieces, chicken, olives and raisins evenly on top of the beef mixture.  Cover everything with the corn mixture.  Sprinkle the top with sugar over the top to caramelize.

Bake the pie for 30-35 minutes until the surface has brown to a deep gold.  Serve immediately.  In Chile, extra sugar is served to sprinkle over the “pastel” as it is eaten.

I love this Salad it is one of my favourites it has so much flavour and it is healthy too. 


The main ingratiation have tuns of health befits I have list some below.

  • Spinach 
  • pepper (what ever colour you like red, orange, green)
  • avocado
  • 4 Kiwis

  • Goat cheese 
  • walnuts 
  • sugar  
For The Dressing 
  • Olive Oil 
  • Mustard 
  • Honey
  • balsamic vinegar 
  • salt and pepper 


Method 
Cut up everything for the salad, and put it in a bowl, I like to leave the Strawberries last then sprinkle goat cheese on top

take a pot and put about 2tbs of butter to it, then add walnuts and 1tbs of sugar and mix it around for about 5 minutes on medium heat. Then add walnuts to salad 

For the dressing I don't use measurement I just taste it until it tastes good. Put about 1/4 cup of olive oil, tbs of olive oile, tsp of mustard, and 2 tsp of honey then sprinkle salt and pepper. Taste the dressing you may need to add more honey, mustard, vinegar, or olive oil

The Best Humus Recipe

The Best Humus Recipe
My boy friend actually made this Humus but it turned out so good I had to post the recipe. 


Me and my boyfriend love Humus so we know what good hummus is and believe me this is good Humus. 


Humus is also very healthy, Garbanzo beans (chickpeas, Humus)are a very good source of folic acid, fiber,  manganese, protein, as well as minerals such as iron, copper, zinc, and magnesium. 


Garbanzo beans help lower cholesterol and 
improve blood sugar levels. 

 Tahini the second main ingrediant is also very healthy for you. Tahini is made from sesame seeds are a good source of manganese, copper, calcium, magnesium, iron, phosphorus, vitamin B1, zinc and dietary fiber. Sesame seeds contain two unique substances: sesamin and sesamolin. Both of these substances belong to a group of special beneficial fibers calledlignans, and have been shown to have a cholesterol-lowering effect in humans, and to prevent high blood pressure and increase vitamin E supplies in animals. Sesamin has also been found to protect the liver from oxidative damage.

Ingredients 
  • 2 cups of soft canned/jar Garbanzo beans
  •  ¾ cups of Tahini
  •  2 soft garlic 
  • Little bit cumin (cort)   2 teaspoons of lemon juice

Method 
  • grind up garbanzo beans into a blender or food processor, but leave a little bit on the side ( you will want to mix them in at the end)
  • Mix the blended garbanzo beans, Tahini, Garlic and lemon juice
  •  Add some salt and keep mixing
  • Add the cumin and mix some more
  •  Add water to make it less thick
  • Add the garbanzo beans that you did not blend
  • You can sprinkle some paprika, olive oil, and persil for decoration at the end if you like
